Green tea is an unoxidized tea. The natural process of oxidation is stopped by using high temperature that prevents polyphenols from oxidizing and softens tea leaves. The fresh leaves are either roasted or steamed.
There are various styles of green tea that depend on the manufacturing process. Green teas differ by leaf shape (long, round, or flat) and drying process (roasted, baked/fired, or sun-dried).
Green tea is mainly produced in China, Japan, Korea, and parts of Southeast Asia and harvested each year between March and late May. Among the better-known green teas are Chinese Dragon Well (Long Jĭng), Japanese sencha and various scented jasmine teas, like Jasmine Dragon Pearls.
